Walnut Cocoa Brownies

Hey All.. Finally I come up with my Walnut Cocoa Brownie.. As, I thought to write this post on Christmas but we were on vacations for Christmas and my birthday celebrations too.. xoxo ūüôā¬†We were in Banana Island around Christmas and it was so much fun. This trip was full of goodness and blisss!!

As, December is a month of vacation and celebrations, as along with Christmas and New-Year eves, it is my birthday month. So for me, this month comes with full of surprises and fun.. I always love Christmas time to meet my old friends and cousins with overnight parties, decorating Christmas tree and home. And if you have mouthwatering brownies for these celebrations, it’s like an icing on the cake.


Now, it’s the time again as its new year eve and here, I am presenting you all walnut cocoa brownie. These brownies are perfect for any occasion and especially in this month you have many reasons to celebrate.. So it the perfect time to have a piece of brownie with your loved ones.

Walnut cocoa brownie are fuzzy, chocolaty, yummy and just melt in your mouth. They have the softest center and chewiest crust. Walnut add a nice crunch and are big source of omega 3 so healthy too. The best part of these brownies is that the preparation is very simple and requires only a handful of commonly used ingredients found in every household.

I have prepared these brownies many times and they are always yummilicious. You can add more nuts such as almonds, dates etc. as per your choice. You can also warm them again in the microwave and enjoy few pieces with some ice-cream or along with a cup of your favorite beverage.

50 gms unsalted butter (home made butter or canola oil can be used) 80 gms (3/4th cup) powdered sugar 2 large eggs 50 gms (1/2 cup) all purpose flour 3 tbsp un-sweetened cocoa powder 1/2 cup walnut finely chopped 1/2 tsp baking powder (to make it spongy and cake like brownie) 6-8 drops vanilla extract

Method: Preheat oven to 180 C or 350 F. Melt the butter and let it cool down to the room temperature. Take a medium sized baking pan and grease it well with butter or you can also use butter paper instead of greasing the pan. Now, sieve all purpose flour, cocoa powder, and baking powder all together in a mixing bowl.

Beat the sugar, and butter lightly. Add eggs and vanilla extract and beat again till they are light and fluffy. Now add flour mixture with wet ingredients lightly using cut and fold method with the help of spatula. Add chopped walnuts and mix well.

Now, pour the batter into the greased pan and sprinkle the left over walnuts and shift the mixture into the preheated oven for 30-35 mins. You can check the baking by inserting the toothpick. If the toothpick comes out clean then your brownies are ready. Let brownies cool down and transfer to a cutting board and spread the chocolate glaze over it and have it into pieces.


For Glaze:

1 tbs cocoa powder
3 tbs water 
2 tbs powder sugar

Take water in a pan and bring to boil. Add cocoa powder and sugar and mix it well and your galze is ready. Adjust water according to consistency.
